Apple Crisp Frappe

To make the Apple Brown Sugar Syrup:

  1. In a medium saucepan, whisk together all ingredients except vanilla. Bring to a boil over medium heat, then reduce heat to medium low, and simmer 10-15 minutes while gently smashing the apples against the pan with the back of a fork. Continue to simmer until mixture is reduced and coats the back of a spoon.
  2. Turn off heat and let syrup cool completely. Strain though a fine-mesh sieve into a glass jar. Stir in vanilla extract. Store in refrigerator.

To Make the Frappe:

  1. Pour coffee into ice cube molds and freeze until firm.
  2. In a high-powered blender, add coffee cubes and pour shake over. Pulse a few times, then blend on high until smooth but still thick. Pour in 1 tablespoon of Apple Brown Sugar Syrup. Blend again.
  3. Pour into a glass and top with whipped topping. Drizzle the remaining tablespoon of Apple Brown Sugar Syrup on top. Enjoy immediately!
