Peppermint Mocha Trifle

  1. In a bowl, mix together ingredients for the first layer. Set aside.
  2. In another bowl, beat cream cheese until light and fluffy, about 1 minute. Add creamer and beat until smooth. Add pudding mixes and milk. Beat for 2 minutes until pudding mixture thickens. Set aside.
  3. Fold peppermint extract into tub of whipped topping.
  4. Now, you are ready to start layering into the trifle bowl:  first, sprinkle about half of the chocolate graham cracker mixture onto the bottom of the trifle bowl, paying special attention to the sides where the layer can be seen. Next, add about half of the pink mixture, spreading it with a spatula to make a nice, pretty layer. Then, scoop in half of the white topping, and spread until smooth. Repeat the layers one more time: the rest of the chocolate graham cracker crumbs, followed by the pink layer, followed by the white layer, making a pretty design on top if you wish.
  5. Garish on top with crushed sugar-free peppermints and chopped chocolate if desired. Refrigerate for 2 hours before serving. Enjoy!
