Mini Red, White, and Blue Turnovers

Instructions

  1. Add flour, butter, salt and 1 tablespoon Splenda Allulose Sweetener to food processor and pulse until butter resembles pea-sized shapes. Add 4 tablespoons water and pulse, adding more water as needed, until dough starts to clump together.
  2. Using your hands, gather dough and shape into 2 discs. Wrap disks separately in plastic wrap and refrigerate for at least 2 hours.
  3. Preheat oven to 425°F. Line 2 rimmed baking sheets with parchment paper.
  4. In a large bowl mix together remaining sweetener, strawberries, blueberries, cornstarch and lemon juice until combined.
  5. Roll each disk out to a ⅛” thickness. Cut roughly 9 4” squares from each disk. Re-roll trimmings to create more squares. Fill each square with about 1 tablespoon filling. Brush edge of each square with egg and fold over, sealing with fork tines. Cut 3 small slits at top of each turnover. Brush with remaining egg. Using remaining pie dough, cut out small stars and place on top of each turnover. Bake, rotating halfway through, until golden brown, about 15 to 20 minutes. Let cool for 10 minutes. Serve warm.
