Chewy Peanut Butter Chocolate Chip Granola Bars

Instructions

  1. Preheat oven to 350ºF. Prepare an 8×8 or a 9×9 baking pan by lining it criss-crossed with sheets of parchment paper, hanging over the edges just a bit, and then spraying it with nonstick cooking spray.
  2. In a medium bowl, mix together oats, Splenda Monk Fruit Sweetener, baking soda, and salt.
  3. In a separate bowl, mix together ground flaxseed and nut milk. Let set for 3 minutes. Stir in peanut butter and applesauce. Pour wet mixture into dry mixture and stir until completely combined. Fold in chocolate chips.
  4. Pour mixture into baking pan and spread out into an even layer. Press chopped peanuts and a few extra chocolate chips into the top of the bars if desired. Bake for 25 minutes, until edges are golden brown. Remove and let cool completely before slicing.
  5. Pick up granola bars using the sides of the parchment paper. Slice into 14 bars. Store in an air-tight container. Enjoy!
