Brownies with Cheesecake Swirl

Instructions

To make the cheesecake swirl layer:

  1. Beat cream cheese, yogurt, egg, Splenda Sweetener and vanilla together until smooth and creamy. Set aside.

To make the brownie layer:

  1. Preheat oven to 350°F. Spray an 8×8 inch pan with nonstick cooking spray and line with parchment paper.
  2. Melt margarine in a small saucepan over medium heat. Turn off heat and whisk in cocoa powder, ⅓ cup chocolate chips, and vanilla, continuing to stir until chocolate is fully dissolved. Let the mixture cool to room temperature at least 10 minutes.
  3. In a medium bowl, beat eggs and Splenda Brown Sugar Blend together for 2 minutes. With the mixer on low, beat in the chocolate mixture, scraping down the sides of the bowl as you go. Mix in the flour and a pinch of salt, being careful not to over mix. Mix in  ¼ cup chocolate chips if using.
  4. Pour half of the brownie of the brownie mixture into the prepared pan. Add most of the cream cheese mixture on top, gently spreading around, but keeping it an inch from the edges all around. Pour the rest of the brownie mixture on top.
  5. Add the rest of the cream cheese mixture in dollops all around the pan. Using a thin knife or skewer, make swirls throughout the mixture.
  6. Bake for 30-40 minutes or until the edges are golden and center is a little fudgy. Let cool completely before cutting.
