For the cake:
1 cup all-purpose flour
1 cup whole wheat pastry flour
1 ½ teaspoons baking powder
1 ½ teaspoons baking soda

¾ cup Splenda® Granulated Sweetener
½ cup canola oil
½ cup 1% lowfat milk
1 large egg, lightly beaten
1 tablespoon apple juice or apple cider
1 teaspoon vanilla extract
1 ½ cups chopped apple
½ cup chopped walnuts
For the topping:
1 cup whole wheat pastry flour
½ cup Splenda® Granulated Sweetener
1 teaspoon ground cinnamon
½ teaspoon baking powder
¼ cup canola oil
¼ cup chopped walnuts

Instructions
Preheat oven to 350°F. Spray a 9” x 9” baking pan with cooking spray.
In a bowl, whisk together flours, baking powder, soda, spices, and salt.
In another bowl, combine Splenda Sweetener, oil, milk, egg, juice, and vanilla extract. Mix until smooth.
Add liquid mixture to dry ingredients, stirring just until moistened. Stir in apples and walnuts. Transfer batter to prepared pan.
In a bowl, combine flour, Splenda Sweetener, cinnamon, and baking powder; whisk to combine. Add oil and mix until blended. Fold in walnuts. Sprinkle topping over the batter.
Bake for 25 minutes or until a wooden pick inserted in center comes out clean.
