Black Bean Chili Recipe

Recipe Ingredients

1/4 cup olive oil
2 cups finely chopped onion
1 2/3 cups chopped red bell pepper
2 tablespoons chopped garlic
2 cups diced zucchini
2 tablespoons chili powder
1 1/2 teaspoons ground cumin
1/2 teaspoon chipotle chile powder
2 teaspoons dried oregano
Three 15 ½-ounce cans black beans, drained; reserve ½ cup liquid
One 16-ounce can tomato sauce
One 14 ½-ounce can petite diced tomatoes
3 packets SPLENDA® Naturals Stevia Sweetener
1/2 teaspoon salt
1/8 teaspoon pepper

Preparation

In a large pot over medium heat, add oil, onions and bell peppers; cook 4-6 minutes. Add garlic and zucchini; cook 3 minutes until onions soften.

Add chili powder, cumin, chipotle chile powder and oregano; cook over low heat for 2 minutes.

Add beans, tomato sauce, tomatoes, SPLENDA® Sweetener, salt and pepper; simmer for 15 minutes, then serve.
