1 1/2 lbs. flank steak, sliced very thin against the grain of the meat.
1/4 cup Splenda®Sugar Blend
1/4 cup lime juice, fresh
1 Tbs. fresh ginger, diced
1/2 cup natural unsweetened peanut butter
2 Tbs. Splenda® Sugar Blend
1 Tbs. extra virgin olive oil
1 tsp. fresh ginger, minced
Prepare Marinated Beef Skewers
In a medium saucepot, mix together all of the marinade ingredients.
Bring marinade to a simmer then allow to cool.
Pour marinade over the slices steak and let marinate in the
refrigerator for 6-8 hours or overnight.
Soak the wooden skewers in water.
Take the steak out of the marinade and discard any allspice corns.
Skewer the steak pieces lengthwise and place on a sheet tray.
Broil for 5 minutes or to preferred doneness.
Sauté onion, garlic and ginger in olive oil until soft and fragrant,
Add the rest of the ingredients and bring to a simmer.
Blend with an immersion blender or food processor until smooth.
Serve with beef satay skewers.
