  1. Preheat oven to 350°F. Grease and flour two 8″ round cake pans.
  2. In a glass measuring cup, combine ½ cup of buttermilk and oil.
  3. In a bowl, whisk together remaining buttermilk, egg whites, and vanilla extract.
  4. In another bowl, combine flour, Splenda Stevia Sweetener, baking powder, salt, and baking soda. Add butter and blend with an electric mixer on low speed until mixture resembles coarse sand.
  5. Add buttermilk-oil mixture and blend on low speed.
  6. Add half of the buttermilk-egg mixture; mix on medium-high speed until well blended. Add remaining buttermilk mixture and mix until well blended.
  7. Transfer batter to prepared pans.
  8. Bake for 30–35 minutes, or until a wooden pick inserted in center comes out with just a few moist crumbs. Cool for 15 minutes on rack before removing from pans. Once cool, frost as desired.
