Thai Cauliflower Rice Pudding

Instructions

  1. In a saucepan, combine 2 cups cauliflower rice, coconut milk, almond milk, Splenda Sweetener, and salt. Bring to a simmer over medium heat. Add remaining cauliflower rice and simmer until pudding reaches desired consistency. Remove from heat, then stir in vanilla extract and cardamom.
  2. Transfer to a bowl; cover and refrigerate overnight.
  3. To serve, thin with additional almond milk if needed. Spoon into serving bowls and garnish with peanuts, coconut, and lime zest.
