Rolled Chocolate Cookies

  1. Preheat oven to 350°F. Lightly grease two baking sheets.
  2. Sift together flour, cocoa, baking powder, and salt into a bowl.
  3. In a mixing bowl, combine butter and Splenda Sugar Blend, beating well.
  4. Add eggs, one at a time, mixing well after each addition. Stir in vanilla extract.
  5. Gradually stir in flour mixture until combined.
  6. Divide dough in half; form each half into a circle. On a lightly floured work surface, roll one portion of dough to ⅛” thick. Cut shapes with a cookie cutter, and place on prepared baking sheets.
  7. Bake 8–10 minutes or until cookies are set. Cool slightly, then transfer to wire racks to cool completely.
  8. Pipe with royal icing and decorate as desired.
