Peanut Butter Chocolate Angel Bites

Instructions

To make the Angel Bites:

  1. Preheat oven to 350°F. Lightly grease a baking sheet.
  2. In a mixing bowl using an electric mixer or whisk, whip egg whites on high speed until frothy.
  3. Add Splenda Sweetener, vanilla extract, and salt. Beat on high speed until medium-stiff peaks form.
  4. Spoon rounded tablespoons of mixture onto prepared baking sheet. Bake for 10–15 minutes or until firm and golden brown. Cool slightly, then transfer to a wire rack to cool completely.

To make the filling:

  1. In a bowl using an electric mixer, combine cream cheese, peanut butter, Splenda Sweetener, and vanilla extract; mix on medium speed until smooth, about 2 minutes.
  2. Slowly add milk while mixing on low speed until well blended. Mix in chocolate wafer crumbs.
  3. Refrigerate until ready to serve.

To assemble the Angel Bites:

  1. Just before serving, place half of Angel Bites on a platter with the bottoms facing up. Top each with a spoonful of filling. Stack another Angel Bite on top.
  2. Drizzle with fudge topping.
