Classic Yellow Cake

Instructions

  1. Preheat oven to 350°F. Lightly grease and flour two 8” round cake pans.
  2. In a bowl, stir together Splenda Sugar Blend, flour, baking powder, and baking soda.
  3. Cut butter into chunks and add to flour mixture. Using an electric mixer, blend on medium speed until mixture is crumbly, about 1 minute.
  4. Add ¼ cup buttermilk and mix at low speed until blended.
  5. In a bowl, combine remaining buttermilk, egg yolks, and vanilla extract.
  6. Add half of the mixture to the flour mixture. Mix on medium-high speed until well blended. Add remaining buttermilk mixture and mix until well blended.
  7. Transfer batter to prepared pans.
  8. Bake for 35–40 minutes, or until a wooden pick inserted in center comes out clean. Cool for 15 minutes on rack before removing from pans. Once cool, frost as desired.
