Banana Chip Mini Muffins

These flourless banana chocolate chip mini muffins may be small in size, but they are big in nutrition! They contain potassium-rich bananas, protein-rich Greek yogurt, and high-fiber oats. Their sweetness comes from plant based Splenda® Stevia Sweetener! These mini muffins can be enjoyed as part of your breakfast or as a snack or dessert.   1. Preheat oven to 350°F. Spray two 24-cup mini muffin pans with cooking spray.
  2. In a bowl, combine flour, baking powder, and salt.
  3. In a mixing bowl using an electric mixer, beat together butter, Splenda Sugar Blend, Splenda Brown Sugar Blend, and vanilla extract on medium speed until creamy.
  4. Mix in bananas and egg.
  5. Gradually blend in flour mixture; mix in morsels.
  6. Spoon batter into prepared pans, filling cups ⅔ full.
  7. Bake for 15–20 minutes or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pans; remove muffins from pans to wire rack to cool completely.
