Instructions

  1. In a large pot over medium heat, add oil; heat on medium-high until oil shimmers. Reduce heat and add onions and bell peppers; cook 7–10 minutes until softened.
  2. Add zucchini and garlic; cook about 5 minutes or until zucchini softens.
  3. Add chili powder, oregano, cumin, and chipotle chile powder; cook over low heat for 2 minutes.
  4. Add beans, tomato sauce, tomatoes, Splenda Stevia Sweetener, salt and pepper. Simmer for 45 minutes. Taste and adjust seasoning.
