Citrusy Gingerbread Cookie Stack Recipe

Recipe Ingredients

1 (14.5 ounce box)soft gingerbread cookie mix
1 tablespoon lemon zest
2 tablespoons lemon juice
4 ounces softened reduced-fat cream cheese
1/4 cup SPLENDA® No Calorie Sweetener, Granulated

Preparation

PREPARE cookies by following the directions on the cookie mix box. Divide dough into 24 cookies. Bake as directed. Cool on wire rack.

MIX together lemon zest, juice, cream cheese and SPLENDA Granulated Sweetener until well blended.

PLACE about 2 teaspoons of cream cheese on the bottom side of a cookie. Top with a second cookie, creating a sandwich.
