Recipe Ingredients

3/4 cup butter, softened
1 cup SPLENDA® No Calorie Sweetener, Granulated
2 teaspoons freshly grated lemon peel
2 teaspoons molasses
2 large eggs
1/2 cup unsweetened applesauce
1/3 cup apple juice concentrate
1 3/4 cups all-purpose flour
2/3 cup old-fashioned oats
1 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1/8 teaspoon ground nutmeg
1 cup diced fresh apples
1/2 cup raisins

Preparation

Preheat oven to 325 degrees F. Lightly spray cookie sheets with vegetable cooking spray.

Beat butter, SPLENDA® Granulated Sweetener, lemon peel and molasses on high speed with an electric mixer 1 minute. Add eggs, one at a time, beating just until yellow disappears after each addition.

Combine applesauce and apple juice concentrate; set aside.

Combine flour, oats, soda, cinnamon, and nutmeg. Gradually add to butter mixture alternately with applesauce mixture, beginning and ending with flour mixture, beating at low speed until blended after each addition. Stir in apples and raisins.

Drop by tablespoonfuls, 1 1/2 inches apart, onto prepared baking sheets.

Bake 10 to 12 minutes. Cool on wire racks.
