  1. Preheat oven to 350°F. Spray 8 half-cup ramekins with cooking spray.
  2. In a bowl, combine pumpkin, evaporated milk, eggs, Splenda Brown Sugar Blend, cinnamon, nutmeg, cloves, ginger, salt, and vanilla extra. Mix until smooth and thoroughly blended. Divide pudding among ramekins.
  3. Place ramekins in a baking dish and pour about 1 inch of warm water into the dish. Bake for 45–55 minutes, until puddings are set.
  4. Garnish each pudding with chopped pecans and serve warm or at room temperature.
