Instructions
To make the Angel Bites:
Preheat oven to 350°F. Lightly grease a baking sheet.
In a mixing bowl using an electric mixer or whisk, whip egg whites on high speed until frothy.
Add Splenda Sweetener, vanilla extract, and salt. Beat on high speed until medium-stiff peaks form.
Spoon rounded tablespoons of mixture onto prepared baking sheet. Bake for 10–15 minutes or until firm and golden brown. Cool slightly, then transfer to a wire rack to cool completely.
To make the filling:
In a small bowl, stir together Splenda Sweetener and cornstarch.
In a saucepan, combine egg substitute, milk, vanilla extract, and butter. Stir in sweetener mixture. Cook over medium heat, stirring constantly, until the mixture begins to thicken and bubble, 3–4 minutes.
Remove from heat and stir in banana flavoring. For an extra-creamy filling, pour into the bowl of a food processor or blender. Cover and process until very creamy, about 10 seconds. Transfer to a bowl and refrigerate at least 20 minutes or until ready to serve.
To assemble the Angel Bites:
Just before serving, place half of Angel Bites on a platter with the bottoms facing up. Top each with sliced banana and a spoonful of filling. Stack another Angel Bite on top.
Garnish with a dollop of whipped cream and chocolate chips.
