16 each (15 lbs.) Sweet potatoes
3 cups (2.55 oz.) SPLENDA® No Calorie Sweetener, Granulated
2 cups (16 fl. oz.) Whole milk
2 tablespoons + 2 teaspoons (0.56 oz.) Orange zest
1 cup (8 fl. oz.) Orange juice, fresh
2 tablespoons + 2 teaspoons (2.64 fl. oz.) Vanilla extract
4 each (6 fl. oz.) Large eggs, lightly beaten
2 cups (8.2 oz) All-purpose flour
¾ cup (6 fl. oz.) Melted unsalted butter
4 cups (7.9 oz.) Panko breadcrumbs
2 cups (8 oz.) Pecans, finely chopped
½ cup (4 fl. oz.) Melted unsalted butter
1 cup (8 fl. oz.) Maple syrup
Preheat oven to 375°F. Place sweet potatoes on a baking sheet; bake for 1 hour or until done. Cool to touch. Peel and mash. Reduce oven to 350°F.
Lightly grease a 2-inch, full hotel pan. Set aside.
Combine sweet potatoes and next 8 ingredients in a large mixing bowl. Beat at medium speed until smooth. Transfer to hotel pan.
Combine panko and remaining ingredients. Sprinkle breadcrumb mixture over top of the casserole. Bake for 1 hour or until the casserole is thoroughly heated. Hold warm for service.
