Preheat oven to 375° F. Lightly grease a 9x13-inch baking dish.
On a baking sheet, bake sweet potatoes for 1 hour or until done. Cool to touch, then peel and mash. Reduce oven to 350° F.
In a large bowl, combine sweet potatoes, SPLENDA® Sweetener, milk, rind, juice, vanilla, egg, flour and 3 tablespoons melted butter. Using an electric mixer, beat at medium speed until smooth. Spoon into baking dish.
In a small bowl, combine 2 tablespoons melted butter, panko, pecans and syrup. Sprinkle over top of casserole.
Bake for 1 hour or until casserole is thoroughly heated.
