Strawberry Jicama Cucumber Salad Recipe

Recipe Ingredients

2 cups strawberries, washed, hulled and rough chopped
1 jicama, peeled and chopped
1 medium-sized cucumber, peeled and chopped
1 small jalapeno, seeded and finely chopped
(note: for more spice, leave the seeds and white membrane intact. For less spice, omit)
1 tablespoon cilantro, finely chopped
Dressing
2 tablespoons lime juice (fresh or from bottle)
1 tablespoon extra-virgin olive oil
2 packets SPLENDA® Naturals Stevia Sweetener
1 teaspoon poppy seeds

Preparation

In a medium bowl, combine strawberries, jicama, cucumber, jalapeno, and cilantro. Toss lightly.

In a small bowl, whisk together lime juice, olive oil, and SPLENDA Naturals Stevia Sweetener.

Add lime juice mixture to strawberry mixture and toss lightly.

Sprinkle with poppy seeds.

Note

Serve chilled as a salad or paired with grilled chicken or pork.
