12 ounces no-yolk wide egg noodles
1 cup reduced-fat sour cream
1 cup low-fat cottage cheese
1/3 cup reduced-fat cream cheese
1/4 cup SPLENDA® Sugar Blend
1/2 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
Cook noodles according to package directions.
Meanwhile, preheat oven to 350 degrees F. Coat a 1- to 2-quart shallow baking dish with non-stick cooking spray.
In large bowl, combine sour cream, cottage cheese, cream cheese, raisins, SPLENDA® Sugar Blend, egg, egg whites, vanilla, and cinnamon. Drain pasta, reserving 1/4 cup pasta water. Add reserved pasta water to sauce mixture. Mix well, then add drained pasta to sauce and toss gently to coat. Spoon mixture into prepared dish.
Bake 40 to 45 minutes, or until set.
