Coconut Chia Pudding Recipe

Recipe Ingredients

1 can (14 oz.) lite coconut milk
1/3 cup SPLENDA® Naturals Sugar & Stevia Sweetener Blend
½ teaspoon pure vanilla extract
¼ cup chia seeds
1 cup fresh berries
Optional: shredded coconut, for garnish

Preparation

In a medium bowl, whisk together coconut milk, SPLENDA® Sweetener, and vanilla extract. A little bit at a time, slowly whisk in the chia seeds. Continue whisking until fully combined.

Cover and place in the refrigerator for 2-3 hours, or overnight, to allow the pudding to set.

After it is set, spoon into serving dishes and add fresh berries. Garnish with shredded coconut, if desired.
