Preheat oven to 425°F. Mix together all BBQ sauce ingredients in a medium bowl. Set aside. Line a baking sheet with parchment paper. Set aside.
Grate raw cauliflower in a medium microwavable bowl. Microwave cauliflower for 7-8 minutes or until soft. Add eggs and 1 cup shredded mozzarella to the cauliflower and mix until well combined.
Pat into four 5-inch rounds on the baking sheet. Bake for 10-15 minutes or until golden. Layer 1/4 cup of the chicken, 1/8 cup red onion (if desired), 1/4 cup BBQ sauce and 1/4 cup shredded part-skim mozzarella, on top of each of the baked cauliflower rounds and return to oven. Bake for another 10-15 minutes, until the cheese is bubbling.
