Banana Coffee Muffins Recipe

Recipe Ingredients

3 large bananas
1/4 cup unsweetened applesauce
1/2 cup SPLENDA® No Calorie Sweetener
1/2 cup SPLENDA® Brown Sugar Blend
1/4 cup fat free milk or light vanilla soy milk
2 tablespoons instant pecan flavored coffee
2 teaspoons ground cinnamon
1 1/2 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda

Preparation

Preheat oven to 350°F.

Blend bananas and applesauce together, then add SPLENDA® Sweetener Products.

In a small cup, pour milk and instant coffee, and stir until mostly dissolved. Add to blender and mix.

Mix cinnamon, flour, baking powder, and baking soda. Blend until fully combined.

Spray muffin tins with non-stick spray, then pour batter into tins 3/4 full.

Bake 15 minutes in preheated oven and remove from oven.

Enjoy warm or cold.
