Twice Baked Sweet Potatoes

Instructions

  1. Preheat oven to 375°F.
  2. Slice sweet potatoes lengthwise in half. Scoop out flesh, leaving about ¼” of flesh in the skins.
  3. In a bowl, combine baked sweet potato and all remaining ingredients. Mix well.
  4. Divide filling among potato skins. Bake for 25–35 minutes.
