Tropical Yogurt Parfait

  1. In a dry skillet, toast coconut over medium-low heat, stirring constantly (watch to prevent burning), 3–5 minutes.
  2. In a bowl, stir together yogurt, pineapple, vanilla extract, Splenda Sweetener and 2 tablespoons of toasted coconut.
  3. In another bowl, combine fruit.
  4. Spoon about 2 tablespoons of yogurt mixture into parfait glasses. Top with about ¼ cup of fruit. Repeat so there are two layers of yogurt and two layers of fruit in each serving dish. Sprinkle each parfait with a bit of the remaining toasted coconut.
