Cranberry Orange Muffins

Instructions

  1. Preheat oven to 375°F. Line 6 muffin cups with paper liners or spray with cooking spray.
  2. In a bowl, stir together flour, baking powder, and baking soda.
  3. In a bowl using an electric mixer, beat butter until smooth. Add Splenda Sweetener and orange zest and beat until light and fluffy. Add egg and mix to combine, then mix in yogurt.
  4. Gradually mix in flour mixture until just combined. Fold in cranberries.
  5. Spoon batter evenly into muffin cups.
  6. Bake for 15–20 minutes or until lightly browned. Cool slightly, then transfer to a wire rack to cool completely.
